Today was a loooong day of work. I woke up at 6:30am, was working by 6:40 and didn’t stop working until after 7pm. I’m beet…err beat.
When I realized it was 12:15 I also realized I had an hour long meeting starting in 15 minutes and knew I better feed myself fast.
Working from home allowed me to run to the fridge and grab supplies for a big, hearty salad.
Beets Me Salad
- 2 cups romaine lettuce, chopped
- 2 cups spinach, chopped
- 1 roasted beet, chopped
- 1/3 cup garbanzo beans
- 1/4 cup crumbled feta cheese
- 2 tbsp olive oil
- drizzle agave nectar
- sprinkle of salt
- sprinkle of pepper
In a large salad bowl add lettuce, spinach, beets, beans and cheese. Drizzle olive oil, agave nectar, salt and pepper over top and serve.
I quickly scarfed down this salad so that I wouldn’t have a mouthful come 12:30 when I was scheduled to lead a call. At 12:45 I was informed we needed to reschedule. Not what I had wanted to hear.
Me and my schedule for the day were thrown off course. When was I to get my emissions test and tag renewed that I had planned for an afternoon outing? Beets me! Let’s just hope I can keep my expired tag under wraps until I find time to change my address and transfer my tag to the new county I’m living in.
I’m thinking I’ll be making this salad again for lunch tomorrow. The agave nectar coupled with salty feta is unbelievably good. I have more roasted beets and more feta in the fridge, just waiting to be served again.
