For a while I was packing salad almost every single day for lunch. Lately I’ve barely had time to grocery shop let alone pack a nutritious mid-day meal.
This weekend I finally got in a good refrigerator restocking and then yesterday I got home from jury duty in time to sit down and make myself a lunch. Score!
I threw in piles of greens and then topped them off with one of my favorite snacks – pretzel crisps, blue cheese and apple.
Blue Cheese, Apple & Pretzel Salad
Serves 1
Ingredients
- 3 cups spring mix
- 2 cups baby spinach
- 1/3 cup garbanzo beans
- 1/4 cup blue cheese crumbles
- 1/4 cup Fiji apple, chopped
- handful of pretzel crisps, crumbled (you can also use crackers)
- 2 tbsp balsamic vinegar
- 1 tbsp olive oil
Place lettuce in a bowl and add on toppings followed by dressing. Toss to coat.
This is a great flavor combination, giving you saltiness, a slight sweetness and plenty of crunch. Plus it makes my love of cheese and crackers healthy.

I never thought to put pretzels in a salad! That is so genius!
