Happy hump day! It’s been a while since I’ve participated in What I Ate Wednesday, so here goes!
I began yesterday with hot oatmeal with chia seeds, almond milk, GoLean, pomegranates and peanut butter. I don’t think I’ll ever get sick of this breakfast, especially the pomegranates. I’m going to be so so so sad when they are out of season. Every time I go to the grocery store I keep my fingers crossed that they’re still in stock. So far it’s worked!
I’ve recently begun taking a multi-vitamin (before I wasn’t taking anything) that I drank along with a glass of Emergen-c to hopefully help lower my chances in getting this year’s nasty flu. I think I’ll pass on feeling utterly terrible…let’s hope I didn’t just jinx myself.
Once I got to work I needed to heat up my hands and body from these crazy temps in the 20s. A hot cup of coffee did the trick and pushed me into work mode (a good and bad thing).
I cooked big dinners on Sunday and Monday nights, which meant I had plenty of leftovers to choose from while packing my lunch. These lentils and sweet potatoes reheated great, especially on top of a bed of spinach.
Snacking was mostly in the form of pistachios which I keep stashed (get it?) in my desk.
I also had a few handfuls of popcorn that a co-worker brought me from our office popcorn machine. Buttery goodness that I ate too quickly for a picture!
The day ended with a nice, warm bowl of chili with cheese, roasted garlic bread and an episode of Jeopardy. I answered the final Jeopardy question correctly and none of the contestants got it right! That will never happen again.
I rewarded myself with another piece of roasted garlic bread toasted with cheddar cheese. Gah, I love bread and cheese.
Finally I needed a sweet treat – pretzels, marshmallows and M&Ms. Don’t knock it until you try it.
